Warm Red Bean Salad
This salad will give you good protein and fiber to make you feel warm, full and filled with energy! I created this salad kind of by mistake one day. I wanted to eat red beans, had a leftover of brown rice and did not know what to do with it. I started adding things in the pan and it turned out to be a delicious and filling salad. I do it all the time now, especially during the week when I need to make something quick! Enjoy!

Ingredients
  • 1 cup cooked brown rice
  • 3 finely chopped garlic cloves
  • 1/2 diced red pepper
  • 1/2 cup fresh parsley chopped
  • 2 cups kale chopped
  • 1 can (540ml) red beans drained and rinced
  • 1 tsp garlic salt
  • Fresh ground black pepper to taste
  • 1 tbsp coconut oil

Instructions
  1. Chop and dice all ingredients as directed above
  2. In a large pan or wok, melt the coconut oil over high heat
  3. Add the chopped garlic cloves and cook for 10 seconds
  4. Reduce to medium heat. Add in all the other ingredients and mix well. cook for 2-3 minutes
  5. Remove from heat. Divide into 4 bowls and drizzle 1-2 tbsp of my Lime & Pepper Tahini dressing on top of each bowl. Serve immediately alone or with a side of baked sweet potatoes.
