Almonds and pecans
Life can get quite busy sometimes and it is important to remember to eat quality foods in order to keep your energy up. One of my ‘go to' are nuts. They contain healthy fat which your body burn slower than sugar. As a result, you don't have to eat as much, as often.

I am a big fan of not eating the same thing everyday and I get bored if I do. For that reason, I like to add a bit of spice and flavor to my meals and snacks. This recipe is a great example of a healthy flavourful snack.
Healthy because nuts contain healthy fat and  also because Turmeric, in the curry powder, is an anti-inflammatory. Flavourful because it taste good!

Ingredients
  • 1 cup pecans
  • 1 cup almonds
  • 2 tbsp melted coconut oil
  • 2 tsp unsweetened coconut shredded
  • 1.5 tsp yellow curry powder

Instructions
  1. Preheat oven to 400°F
  2. In a bowl, mix nuts with the melted coconut oil, and shredded coconut.
  3. Lay the nuts on a parchment paper lined baking sheet. Make sure nuts are in one layer.
  4. Cook for 10 minutes in the oven. Keep an eye on them so it does not burn.
  5. Let the nuts cool completely before adding the curry powder. Mix well and enjoy!
Recipe Notes

*1 serving = 1 cup.  It is not recommended to eat more than the size of the palm of your hand of nuts per day.
