paleo banana bread

This Paleo Banana Bread is based on my grandmother's recipe. It is gluten free, reduced in sugar and believe me, as delicious as my grandma's. Great for breakfast, dessert or snack.
Banana bread is part of my childhood memories. My mom taught me to bake it when I was a little girl, so did her mom when she was a kid. Some people inherit money, I inherited banana bread. Hahaha.
Over the years I made many, many, many different versions of my grandmother's recipe: some good, some bad, some healthier, some not. When I started being a bit more conscious about my health, I looked back at the ingredients in the banana bread recipe and realized that back in the days, bad cholesterol and high sugar was not a priority. As long as it tasted good, what was in it didn't matter much.  This is why I ”reno” it for today's standards.

Ingredients
  • 3 mashed bananas
  • 2 cups almond meal or flour
  • 1/4 cup coconut flour
  • 1 egg
  • 1/4 cup butter*
  • 1/4 cup maple syrup
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 1 tsp vanilla
  • 1/2 cup semi-sweet chocolate chips (optional)

  • 1 tsp baking soda

Instructions
  1. Preheat oven to 375°F. Line 2 bread pans with parchment paper and set aside.
  2. Soften the butter in the microwave for 10 seconds.
  3. In a large bowl, mix the butter and the maple syrup using a hand mixer. Mix until well blended
  4. Add the egg and vanilla to the butter and continue mixing until smooth.
  5. Add the mashed bananas and mix for a few second.
  6. Add almond and coconut flour, salt and baking soda to the mix using a wooden spoon. Mix well.
  7. If you decide to use chocolate chips, add at this stage.
  8. Divide the dough into 2 bread pans. You can add more chocolate chips on top if you desire. Place pans in the oven and bake for 40 minutes.
  9. Let the banana bread cool down completely on a cooking rack before serving.
Recipe Notes

*If you try to cut the bread when hot, it will all crumble. Letting it cool down helps the bread be more solid and hearty. Once cooled, I like to put it in the fridge for an hour before serving.
*Please note that the recipe makes two 9x5in size breads of 10 slices each.  1 serving = 1 slice.
