Ingredients
  • 4 cups kale leaves (whole- stem off)
  • 1 avocado
  • 1/2 cup apple sauce
  • 1/2 cup coconut oil
  • 2 tbsp flax meal (ground flax seeds)
  • 6 tbsp water
  • 3 oz unsweetened chocolate (melted)
  • 1 cup Monk fruit sweetener
  • 1 tsp vanilla
  • 1 cup whole wheat flour
  • 3/4 cup unsweetened cocoa powder
  • 1 tsp salt
  • 1 cup semi-sweet chocolate chips

Instructions
  1. Preheat the oven to 350°F and line a 9x13 baking pan with parchment paper or a silicone liner.
  2. In a small bowl, mix the flax meal with the water. Let sit for 5 minutes.
  3. Chop the kale leaves and steam for 5 minutes.
  4. Once steamed, add the chopped kale leaves in the food processor or blender, along with the avocado, apple sauce, coconut oil, melted unsweetened chocolate, monk fruit sweetener, vanilla and the soaked flax meal.
  5. Transfer the mixture into a large bowl. Add the flour, cocoa powder and salt. Mix until a smooth dough is formed. Use a wooden spoon.
  6. Add 3/4 of the chocolate chips to the dough and mix well.
  7. Pour the dough into the parchment lined pan and spread evenly. Sprinkle the remaining of chocolate chips on top (1/4 cup).
  8. Put in the oven and bake for 35 minutes.
  9. Let cool at least 10 minutes before cutting.
  10. You can keep the brownies up to 5 days in an air tight container in the refrigerator.
