banana-chocolate cookies

These delightful treats are made with banana and almond flour. There is no sugar added in the recipe. The sweetness comes from the banana and the chocolate. I used semi-sweet chocolate chips in the dough but you can easily drop it or replace it with cacao nibs or cranberries. The more ripe your bananas are, the sweeter the cookies will be. You can also skip the chocolate dipping to make them into breakfast cookies.
Perfect for potlucks, afternoon tea, family gathering or just because.

Ingredients
  • 3 mashed banana
  • 1 cup almond flour
  • 1/2 cup semi-sweet chocolate (chocolate chips or pieces- optional)
  • 1/2 cup unsweetened coconut
  • 2 tbsp almond butter
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • dipping chocolate
  • 1.5 oz semi-sweet chocolate melted
  • 1.5 oz white chocolate melted

Instructions
  1. Preheat oven to 350°F
  2. In a large bowl, add all the ingredients together and mix well.
  3. Scoop 1 tablespoon of the cookie dough an deposit on a large parchment lined cookie sheet. Repeat until you scoop all the dough.
  4. Bake in oven for 12 minutes. Let the cookies cool completely in the pan or on a rack before dipping in the chocolate.
  5. Dip half of each cookie in either the dark or white chocolate and place it back on the cookie sheet.
  6. Refrigerate at least 1 hour before serving
