Easy Quinoa Salad

The first time I made this salad it was more of a trial and error type of thing. You must have noticed by now that almost all of my recipes were created based on left overs in my fridge/pantry. This salad was no different.

Chickpeas and quinoa are full of protein, so I started with those two ingredients. I added some cranberries to give a little bit of sweetness to the salad. I then added some veggies, mixed everything with the dressing and topped the salad with half an avocado for healthy fat.

Ingredients
  • Salad
  • 4 cup quinoa cooked
  • 1 can (540 ml) chickpeas rinsed & drained
  • 1 cup baby spinach chopped
  • 1 whole orange bell pepper chopped (use another color if you'd like)
  • 2 whole green onions chopped
  • 1/2 cup dried cranberries
  • 1 whole avocado (optional)
  • Dressing
  • 1/4 cup lemon juice (amounts to the juice of 1 lemon)
  • 2 cloves garlic minced
  • 1/4 cup olive oil
  • 1 tsp stevia
  • 1/2 tsp garlic salt
  • salt and pepper to taste

Instructions
  1. Cook the quinoa as per the instruction on the package.
  2. While the quinoa is cooking, chop the spinach, orange bell pepper and green onions.
  3. Add the chopped vegetables to a large bowl, along with the chickpeas and the dried cranberries. Set aside.
  4. In a small bowl, mix all the ingredients for the dressing. Set aside.
  5. Once cooked, add the quinoa to the big bowl. Mix all the ingredients well.
  6. Pour the dressing over the salad. Mix well. **Optional: top with some avocado slices.
Recipe Notes

This salad can be served warm or cold.

*Serving Size:1 cup of salad without avocado
