The first time I made this salad it was more of a trial and error type of thing. You must have noticed by now that almost all of my recipes were created based on left overs in my fridge/pantry. This salad was no different.
Chickpeas and quinoa are full of protein, so I started with those two ingredients. I added some cranberries to give a little bit of sweetness to the salad. I then added some veggies, mixed everything with the dressing and topped the salad with half an avocado for healthy fat.
