Braised beef
When I was a kid, my mom was making roasts almost every Sundays, from fall to spring. She would make all kinds of roasts: from roast beef to roast pork and roasted chicken. She would put the roast in the oven in the morning and it would cook all day. I will always remember those Sundays: my sister and I would get big warm blankets, snuggle on the couch and watch old movies while the sent of the cooking roast would fill the house with its perfume.

Maybe due to its nice flavor and also due to my lack of knowledge in cooking, I thought cooking roast was so complex. I remember thinking my mom must be a chef for cooking such delicious food. Meanwhile, the reason why my mom was making roasts so often was probably because it was the easiest meal to cook and it gave her time to do other things around the house while it was cooking. Funny how perspectives change as you grow older. 😉

Ingredients
  • 1 sirloin tip Roast about 3 lbs
  • 1/4 cup ketchup
  • 2 cup beef broth
  • 2 green onions chopped
  • 4 large carrot sliced 1 inch thick
  • 1 tbsp maple syrup
  • 2 tsp rosemary
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 tsp flower of salt or sea salt
  • 1 tbsp butter*
  • 2 tbsp flour
  • pepper to taste

  • 2 green onions chopped
  • 4 large carrot sliced 1 inch thick
  • 1 tbsp maple syrup
  • 2 tsp rosemary
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 tsp flower of salt or sea salt
  • 1 tbsp butter*
  • 2 tbsp flour

Instructions
  1. Heat the oven at 350°F
  2. Rub both side of the roast with the flower salt (or sea salt), 1 tsp of rosemary and cracked pepper. In a large pan, brown the meat in the butter (1-2 minutes each side over high heat). Remove meat from the pan and place in an ovenproof dish. Set aside.
  3. In the same large pan, brown the chopped green onions (about 1 minute) over medium heat. Add the flour, remaining 1 tsp of rosemary, thyme and oregano. Mix well (10 seconds). Add the beef broth, ketchup and maple syrup. Bring to a boil while whisking constantly.
  4. Add the sauce over the meat in the ovenproof dish. **Do not pour all the sauce in. Only add sauce halfway up meat and keep the rest for later.**
  5. Cover the dish and place on the bottom rack in the oven for 3 hours, turning the meat over every hour.
  6. After 3 hours, add carrots around the roast. Add 3/4 cup of the remaining sauce set aside earlier, cover, and cook for another hour.
