Dairy Free Breakfast ParfaitWhy make it complicated when it can be so easy? This Dairy Free Breakfast Parfait is so simple to make and yet looks very impressive at your Sunday brunch. Instead of yogurt, I used coconut milk and added some chia seeds to it. The chia seeds expand and turn the coconut milk into a pudding. The texture is perfect and thick enough to do layers.

Why coconut milk?
Coconut milk has a lot of health benefits. Some of which include weight management and a boost of energy. I am not going to get in the details of how it works but, in summary, the type of fat in coconut milk is digested immediately. As a result, it gives you a boost of energy and reduces the chances of fat to be stored in your body. It is a great alternative to cows milk.

Ingredients
  • 1/2 can (200ml) coconut milk
  • 1/2 cup fresh raspberries
  • 1/2 cup blueberries
  • 1/3 cup granola
  • 2 tbsp chia seeds
  • 1/2 tbsp maple syrup

  1. Divide the coconut milk into 2 bowls.
  2. In one bowl, add 1/4 cup of raspberries and the maple syrup to the coconut milk. In the other bowl, add 1/4 cup of blueberries to the coconut milk.
  3. With a hand mixer, mix both bowls until smooth.
  4. Add 1 Tbsp of chia seeds in each bowl and mix well with a spoon. Place both bowls in the refrigerator for at least 30 minutes for it to thicken.
  5. Once the raspberry and blueberry mixtures are thick enough, layer them into a glass, adding granola in between (about 1/4 cup of granola). Add the rest of the granola over the coconut mixture and top with the remaining fresh raspberries and blueberries.
