Cranberry Chicken Breast

Why chicken and cranberries?  My answer is: “Why not?”

I was looking for something different, a new ingredient to cook my chicken with. I had cranberries and I had chicken breasts so I made something out of it. Sounds easy doesn't it? The truth is it took me about half a day to figure that one out. I had to leave the cranberries on my kitchen counter and put the chicken breasts on the top shelf in my fridge to get inspired. Each time I was going to the kitchen and I was opening my fridge, I was seeing the 2 items and my mind kept spinning. The challenge was to come up with something other than cheese to stuff the chicken.

I got the idea of using mayo instead of cheese and made balsamic reduction to bring a bit of vinegar in the mix and cut the sweet from the cranberries. I must say I did enjoy it quite a bit. Ingredients
  • Chicken
  • 1 cup mayonnaise
  • 1/3 cup dried cranberries (chopped)
  • 1 tbsp Dijon mustard
  • 1 tbsp rosemary (dry)
  • 4 chicken breasts (skinless, boneless)
  • Balsamic reduction
  • 1/4 cup balsamic vinegar
  • 2 tbsp maple syrup
  • 1/4 cup dried cranberries

  • 4 chicken breasts (skinless, boneless)

Instructions
  1. Preheat oven to 375°
  2. Mix the mayonnaise, chopped cranberries, dijon mustard and rosemary in a bowl.
  3. Place the chicken breasts on a parchment paper lined baking sheet. Make small cuts on top o the chicken breasts (3 cuts per breast, deep enough to stuff with mayo but not all the way through the chicken)
  4. Fill each cut on the chicken breasts generously with the cranberry mayo.
  5. Cook in the oven for 30 minutes.
  6. In the meantime, bring the balsamic vinegar, the maple syrup and 1/4 of cranberries to a boil over a medium heat. Reduce heat to medium-low for 3-5 minutes and stir occasionally.
  7. The balsamic vinegar will thicken as it cool down.
  8. Serve the chicken breasts with the balsamic reduction and any desired sides. I served it with cauliflower rice and onion sprouts.
