Chicken sausages and shrimps paellaHi!
This is another one of my left overs inspired recipes. It does not require complicated ingredients, it is quick to make and you can cook a big batch for the week. It is not the traditional paella but it is very savory and healthy. I added a bit of Turmeric to it for extra health benefit (see my Turmeric and Zucchini Turkey Meatballs recipe to learn more about the benefits of using Turmeric).

Ingredients
  • 1/2 cup endamame beans
  • 11 oz sliced spicy chicken sausage meat (about 3 sausages- skin off))
  • 1 cup raw shrimps
  • 1/2 cup finely chopped sundried tomatoes
  • 1 red pepper diced
  • 1 cup sliced white mushrooms
  • 4 cups cooked white rice
  • 2 minced garlic cloves
  • 1 diced red onion
  • 2 tbsp tomato paste
  • 1 tsp ground tumeric
  • 1 tsp paprika
  • 1 tsp garlic salt
  • cayenne pepper flakes to taste
  • salt & pepper to taste
  • 1 tbsp coconut oil

Instructions
  1. Heat coconut oil in a Wok or large skillet over medium heat. Once hot, add the minced onion and garlic. Sautee until soft (about 1 minute).
  2. Add the chicken sausages, the sliced mushrooms and the diced red pepper. Cook for about 3-4 minutes, until the sausages are completely cooked. Stir in the shrimps until they become pink.
  3. Add the tomato paste, paprika, turmeric. garlic salt, cayenne pepper flakes and salt & pepper. Mix well.
  4. Add the rice, endamames and sundried tomatoes. Stir everything together and adjust seasoning if necessary. Serve immediately.
