Cauliflower Fried Rice

Mr. Rice and me…

I always had issues with cooking rice. I just cannot consistently cook good rice. It is either mushy and overcooked or hard and undercooked, but it is rarely perfect. Having a Caribbean background, I admit this is quite shameful. I know you might think this is ridiculous as rice is one of the simplest and easiest things to cook, but for some reasons, I don't get it. I really don't. Even my relatives tried to show me times and times again but, I am telling you, this is a lost case.

So, because Mr. Rice and I are not the best of friends, I turned to cauliflower rice. It is simple, quick and my success rate is always 100%. Yay! The rice is entirely made of cauliflower; it is basically shredded cauliflower. It is used instead of regular rice so it is an excellent way to integrate more vegetables to your diet. It really only takes 5 minutes to make in the food processor.

Ingredients
  • 4 cups cauliflower rice (1 whole cauliflower)
  • 1 large carrot diced
  • 1 red onion chopped
  • 1/2 red pepper finely diced
  • 2 garlic cloves minced
  • 2 eggs
  • 1/2 pound ground turkey, beef or chicken (optional)
  • 2-3 tbsp soy sauce (use Coconut Aminos for gluten free/paleo)
  • 2 tbsp basil leaves (dried or fresh)
  • cilantro fresh- quantity to taste
  • cayenne pepper flakes to taste
  • salt & pepper to taste
  • 1 tbsp butter* (or coconut oil)

Instructions
  1. In a small bowl, whisk 2 eggs and set aside.
  2. Heat butter or coconut oil in a wok over medium heat. Add garlic, onion, carrot and pepper. Cook for about 1-2 minutes until soft.
  3. *If you are using meat, add it to the vegetables and stir until completely cooked. This will add about 5-7 minutes to the recipe.
  4. Add cauliflower to the mix, along with the spices. Stir rice until cauliflower begins to soften (about 2 minutes).
  5. Push the rice to the side of the work to create an opening in the middle and add the whisked eggs. Scramble the eggs until cooked.
  6. Add the soy sauce (or Coconut Aminos) to the rice and mix well. Remove wok form heat. Top each plate with cilantro. Serve immediately.
