carrot and dates steel cut oat

I always liked to cook quick and easy recipes. What I also like is variety in what I eat. I've made my ‘Apples-Cinnamon oat' a couple of times and now was the time for a new flavor.  I looked in my fridge and cabinets for a moment and I found some carrots and dates. I figured the mix of both couldn't be that bad so I gave it a try.  OMG!  Let me tell you: the house smelled so good, I wanted to lick the walls (but I did not)! All I can say is that it is: 

Rich 
Creamy 
Flavorful 
delightful

Ingredients
  • 1 cup gluten free steel cut oat
  • 1 1/2 cups nut milk of your choice (I used full fat coconut milk)
  • 1 1/2 cups water
  • 1/2 cup finely grated carrots
  • 1/2 cup pitted dates (cut into bite size)
  • 1 tbsp maple syrup
  • 1 tbsp butter*
  • 1/4 tsp salt

Instructions
  1. Spray the slow cooker (sides and bottom) with oil to avoid the oat from sticking on it and burn
  2. Place all the ingredients into the slow cooker and mix it well
  3. Set the slow cooker on High for 4 hours (or Low for 6 hours)*
  4. Eat right away or store in the fridge in an airtight container*
Recipe Notes

*Instead of maple syrup and butter, I often use 1 tbs of maple butter.

*If you set the slow cooker on High for 4 hours, check the oat after 3 hours. If the sides are starting to get crusty and dark, the oat is ready.

*Once it cools off, the oat becomes very thick.  You can add a bit of milk when reheating it (microwave or stove) to get the desired texture.
