This breakfast cookie idea came to me one day because I had ripe bananas and I was out of flour. I was also out of things to eat for breakfast the next day so I had to make something up. Basically, it was time for me to go grocery shopping. That being said, I went through my kitchen cabinet and found a bit of this and a bit of that. I put all of it together and TADA! Smoothies are my favorite “left over” breakfast. You can literally use whatever fruits or vegetables you have in your fridge to make them. These delightful treats are made with banana and almond flour. There is no sugar added in the recipe. The sweetness comes from the banana and the chocolate. I used semi-sweet chocolate chips in the dough but you can easily drop it or replace it with cacao nibs or cranberries. The more ripe your bananas are, the sweeter the cookies will be. You can also skip the chocolate dipping to make them into breakfast cookies.
Perfect for potlucks, afternoon tea, family gathering or just because.
