When I was a kid, my mom was making roasts almost every Sundays, from fall to spring. She would make all kinds of roasts: from roast beef to roast pork and roasted chicken. She would put the roast in the oven in the morning and it would cook all day. I will always remember those Sundays: my sister and I would get big warm blankets, snuggle on the couch and watch old movies while the sent of the cooking roast would fill the house with its perfume.
Maybe due to its nice flavor and also due to my lack of knowledge in cooking, I thought cooking roast was so complex. I remember thinking my mom must be a chef for cooking such delicious food. Meanwhile, the reason why my mom was making roasts so often was probably because it was the easiest meal to cook and it gave her time to do other things around the house while it was cooking. Funny how perspectives change as you grow older. 😉
It is my pleasure to now share my version of my mom's beef roast a.k.a braised beef. It is really the easiest recipe you can make. Give it a try and let me know what you think. If you like it, please let me know in the comment box below. Also remember to tag @vic.r_c if you share it on Instagram. We would love to see how it turned out for you.
