When I was a kid, my mom was making roasts almost every Sundays, from fall to spring. She would make all kinds of roasts: from roast beef to roast pork and roasted chicken. She would put the roast in the oven in the morning and it would cook all day. I will always remember those Sundays: my sister and I would get big warm blankets, snuggle on the couch and watch old movies while the sent of the cooking roast would fill the house with its perfume.
Maybe due to its nice flavor and also due to my lack of knowledge in cooking, I thought cooking roast was so complex. I remember thinking my mom must be a chef for cooking such delicious food. Meanwhile, the reason why my mom was making roasts so often was probably because it was the easiest meal to cook and it gave her time to do other things around the house while it was cooking. Funny how perspectives change as you grow older. 😉

This bread is amazing and it only needs 90 seconds to cook… in the microwave!
I found a lot of bread recipes made with coconut flour. There is nothing wrong with coconut flour but I personally prefer almond flour. One day, I wanted a sandwich and I was out of bread. I thought to myself: ‘If I can make brownies in 2 minutes, I should be able to make bread in that time too!'
After a few misses, I got it: a moist and flavorful bread made in 90 seconds with almond flour. This is now my go to bread. The recipe only makes 1 little bread at a time though. Doubling the recipe to make multiple breads at a time does not work. I will work on finding a solution. Until then, please enjoy this recipe: I bet you'll be pleasantly surprised.
