Canadian Shepherd’s Pie 2.0

Shepherd's Pie- Pâté Chinois
The Canadian Shepherd's Pie, also known as Pâté chinois in French Canadian, is part of the Canadian comfy food repertoire. It is made of mashed potatoes, corn and ground meat. This traditional Canadian dish owes its origin to the Chinese workers who, according to the oral history, made this dish while working on the railway in Quebec, Canada. The recipe was then adopted by the locals there and was later on named pâté chinois (Chinese pie) due to its history.
sweet potato
This dish is really easy to make as it requires minimum ingredients. For this recipe reno I used extra lean ground turkey instead of ground beef and Japanese sweet potatoes (purple skin- white meat) instead of the regular white potatoes. Why would I do that you ask? To reduce fat, thanks to the turkey, and to fill this dish with nutrients find in sweet potatoes.

Cauliflower Fried Rice

Cauliflower Fried Rice

Mr. Rice and me…

I always had issues with cooking rice. I just cannot consistently cook good rice. It is either mushy and overcooked or hard and undercooked, but it is rarely perfect. Having a Caribbean background, I admit this is quite shameful. I know you might think this is ridiculous as rice is one of the simplest and easiest things to cook, but for some reasons, I don't get it. I really don't. Even my relatives tried to show me times and times again but, I am telling you, this is a lost case.

So, because Mr. Rice and I are not the best of friends, I turned to cauliflower rice. It is simple, quick and my success rate is always 100%. Yay! The rice is entirely made of cauliflower; it is basically shredded cauliflower. It is used instead of regular rice so it is an excellent way to integrate more vegetables to your diet. If you are not sure how to make cauliflower rice, I suggest you take a look at the Inquiring Chef's guide on how to make light and fluffy cauliflower rice. It really only takes 5 minutes to make in the food processor.

Spicy Bunless Turkey Burger

Spicy Bunless Turkey Burger

Bunless Turkey Burger

When the BBQ season was at its peak, I had to come up with a flavorful burger recipe. I opted for a bunless burger since I try to avoid wheat as much as possible. The challenge was to find a way to make my burgers more filling so I don't need to eat a lot of patties to feel full. I am not a fan of poached eggs with meat so I opted to top my burgers with guacamole instead.  Turned out that the turkey burger and the guacamole are a perfect match!  These bunless burgers are absolutely delicious. Whether you grill them or cook them on the stove, they remain very flavourful.

Give it a try and let us know what you think; we would love to have your input. Please leave your comment below. You can also take a picture and share your bunless turkey burger on Instagram. If you do, don’t forget to tag @vic.r_c so we can see what you came up with.

Vegan Chickpea Bowl

Vegan Chickpea Bowl

I am in love with bowls! They are gaining more and more popularity lately. It is probably because they are so easy to put together and there are endless combinations. The best way I would describe them is:

Fresh
healthy
versatile
delicious

This Vegan Chickpea Bowl was inspired by my left overs. I literally took the vegetables I had left in my fridge and paired them with what was in my kitchen cabinet. The result was so yummy! The avocado dressing is bringing everything together. I also added unsweetened coconut shreds on top of it all to put a twist to it.

BTW, I don't suggest you eat this bowl with chopsticks unless you are very good at it. To be quite honest, I only used the chopsticks for the picture. As soon as the picture was taken, I grabbed a fork and inhaled it all. Lol
