The first time I made this salad it was more of a trial and error type of thing. You must have noticed by now that almost all of my recipes were created based on left overs in my fridge/pantry. This salad was no different. (more…)
OK, before you ask, I have no idea why it is called Chinese salad. I made this recipe countless times for different occasions (birthdays, pot luck, Christmas, New Year, etc.) and I never know what to say when someone ask where the name is coming from. The salad is not even Chinese!!
This recipe was passed on to me by my mom. I asked her about the origin of its name and she's never been able to answer. Hahahaha, oh mom! That is why I renamed it “Mom's Chinese Salad”. That way I can just say that my mom made up the name. 😉
I did not change any ingredients from the original recipe; I simply adjusted the quantities a bit to balance the protein, fat and carbs better. I assure you the picture doesn't do it justice: this salad is simply amazing!
Hope you like it as much as I do. Let me know in the comment box below or by rating this recipe. You can also tag me on Instagram @vic_r.c and share your thoughts there.

My husband is addicted to Jerk chicken. No kidding! He told me he could eat Jerk chicken everyday for breakfast, lunch and dinner and he would still be excited each time he would eat it. Naturally, I had to figure out how to make a healthier version of Jerk chicken from scratch. (more…)
I always had a hard time cooking eggplant. They are so simple but yet so tricky. If too cooked, they are mushy; if not cooked enough, they are not tasty at all. Each time I go to an Asian restaurant, the eggplant is so delicious, flavourful and perfectly cooked. I tried and tried to do it and I finally go it! “Practice makes perfect” as they say… (more…)
When I was a kid, my mom was making roasts almost every Sundays, from fall to spring. She would make all kinds of roasts: from roast beef to roast pork and roasted chicken. She would put the roast in the oven in the morning and it would cook all day. I will always remember those Sundays: my sister and I would get big warm blankets, snuggle on the couch and watch old movies while the sent of the cooking roast would fill the house with its perfume.
Maybe due to its nice flavor and also due to my lack of knowledge in cooking, I thought cooking roast was so complex. I remember thinking my mom must be a chef for cooking such delicious food. Meanwhile, the reason why my mom was making roasts so often was probably because it was the easiest meal to cook and it gave her time to do other things around the house while it was cooking. Funny how perspectives change as you grow older. 😉
It is my pleasure to now share my version of my mom's beef roast a.k.a braised beef. It is really the easiest recipe you can make. Give it a try and let me know what you think.
