Paleo Banana Bread

Paleo Banana Bread

This Paleo Banana Bread is based on my grandmother's recipe. It is gluten free, reduced in sugar and believe me, as delicious as my grandma's. Great for breakfast, dessert or snack.
Banana bread is part of my childhood memories. My mom taught me to bake it when I was a little girl, so did her mom when she was a kid. Some people inherit money, I inherited banana bread. Hahaha. (more…)

Easiest Braised Beef

Easiest Braised Beef

Braised beef
When I was a kid, my mom was making roasts almost every Sundays, from fall to spring. She would make all kinds of roasts: from roast beef to roast pork and roasted chicken. She would put the roast in the oven in the morning and it would cook all day. I will always remember those Sundays: my sister and I would get big warm blankets, snuggle on the couch and watch old movies while the sent of the cooking roast would fill the house with its perfume.

Maybe due to its nice flavor and also due to my lack of knowledge in cooking, I thought cooking roast was so complex. I remember thinking my mom must be a chef for cooking such delicious food. Meanwhile, the reason why my mom was making roasts so often was probably because it was the easiest meal to cook and it gave her time to do other things around the house while it was cooking. Funny how perspectives change as you grow older. 😉

It is my pleasure to now share my version of my mom's beef roast a.k.a braised beef.  It is really the easiest recipe you can make. Give it a try and let me know what you think. Cauliflower Fried Rice

Cauliflower Fried Rice

Mr. Rice and me…

I always had issues with cooking rice. I just cannot consistently cook good rice. It is either mushy and overcooked or hard and undercooked, but it is rarely perfect. Having a Caribbean background, I admit this is quite shameful. I know you might think this is ridiculous as rice is one of the simplest and easiest things to cook, but for some reasons, I don't get it. I really don't. Even my relatives tried to show me times and times again but, I am telling you, this is a lost case.

So, because Mr. Rice and I are not the best of friends, I turned to cauliflower rice. It is simple, quick and my success rate is always 100%. Yay! The rice is entirely made of cauliflower; it is basically shredded cauliflower. It is used instead of regular rice so it is an excellent way to integrate more vegetables to your diet. If you are not sure how to make cauliflower rice, I suggest you take a look at the Inquiring Chef's guide on how to make light and fluffy cauliflower rice. It really only takes 5 minutes to make in the food processor.

Carrots and Dates Steel Cut Oat

Carrots and Dates Steel Cut Oat

I always liked to cook quick and easy recipes. What I also like is variety in what I eat. I've made my ‘Apples-Cinnamon oat' a couple of times and now was the time for a new flavor.  I looked in my fridge and cabinets for a moment and I found some carrots and dates. I figured the mix of both couldn't be that bad so I gave it a try.  OMG!  Let me tell you: the house smelled so good, I wanted to lick the walls (but I did not)! All I can say is that it is:

Rich
Creamy
Flavorful
delightful

This oat recipe and its subtle sweetness will make you fall in love with your breakfast all over again.

Give it a try and let us know what you think; we would love to have your input in the comment box below. You can also take a picture and share your masterpiece with the world. If you do, don't forget to tag @vic.r_c on Instagram so we can see what you came up with.
