Smoothies are my favorite “left over” breakfast. You can literally use whatever fruits or vegetables you have in your fridge to make them. They are so quick to make and there are endless possibilities. You can use fresh fruits or frozen fruits, you can use coconut oil, avocado or nut butter for extra healthy fat and (more…)

The Reno Banana Split

The Reno Banana Split

banana split

Today I felt like eating a banana split. I don't know where that craving was coming from since it is kind of cold outside, but that is what I wanted and I had to do something about it. Luckily for my health, I did not have the traditional ingredients required to make a banana split : chocolate sauce, caramel sauce, ice cream, Maraschino cherry, whip cream, etc. Instead I had fresh fruits, nuts, dark chocolate and coconut whip cream. I figured this would be a great opportunity to reno the traditional frozen dessert into a healthier one.  I now present to you The Reno Banana Split!

Tip: If you do not want to make your own coconut whip cream, you can buy the one in a can. It is made with real coconut cream (non dairy and lactose free), and only has 30 calories and 2 grams of sugar per 4 tbsp.

You can also make your own coconut milk based nice cream (dairy free ice cream) if you prefer to get closer to the ‘real' banana split.  I suggest you to make your nice cream instead of buying it since the store-bought one have a tendency to contain a fair amount of sugar.

I truly hope you enjoy this healthier version of the traditional banana split. Let us know in the comment box below. Don't forget to tag @vic.r_c when you share it on Instagram.

Purple Breakfast Sweet Potato

Purple Breakfast Sweet Potato

Purple Breakfast Sweet Potato

When you bake a whole potato in the oven, there is a number one rule you need to follow: poke holes in the potato before placing it in the oven!!! The reason why you need to poke holes in the potato is to avoid a massive explosion to happen in your oven.  You see, potatoes have liquid inside. When baked, they act as a pressure cooker: if you don't release the steam, it will explode. Trust me, you do not want to deal with the cleaning that comes with that. I suggest you use a fork to do the holes as it makes small holes that you can barely see. Poke them all around the potato and there you go, ready to bake.

This Purple Breakfast Sweet Potato is easy to put together whenever you are running late in the morning because your alarm didn't go off and the kids take their sweet time to get ready…  Just bake the potato the night before and store it in the fridge. Place it in the microwave for 30 seconds or so to warm up, add the almond butter and fruits on top, and you are on your way to a fabulous day.

Classic Monkey Bowl

Classic Monkey Bowl

classic monkey bowl

The classic monkey bowl is a very easy and fast breakfast for busy mornings. It is filled with protein so it will keep hunger away until lunch. You can have it ready and packed in less than 5 minutes. Nothing complicated, nothing fancy, just good whole food.  I would describe this classic monkey bowl as:

Hearty
Healthy
High protein
Easy
Delicious

Have you ever wonder why it is called ‘Monkey Bowl'? I guess it's because there are bananas in it? Anyhow, try it and let us know what you think; we would love to have your feedbacks.
