What is your best Easter memory? Mine was when I was about 7 years old. For Easter that year, my mom made one of the most memorable GIANT treats platter for the kids in the family. I remember helping her prepare the chocolate pretzels (made with chocolate dough, rolled and shaped into pretzels). There were also mini cakes and all kinds of chocolates. My mom made everything from scratch and it was mind blowing. For this year's Easter, I did not make a platter but I made those raw-vegan eggs. There is very little refined sugar in those and no baking is required. The recipe will give you 18 eggs that you can decorate as you please. Who knows, these may become your best Easter memory. Gluten Free Banana-Chocolate Cookies

These delightful treats are made with banana and almond flour. There is no sugar added in the recipe. The sweetness comes from the banana and the chocolate. I used semi-sweet chocolate chips in the dough but you can easily drop it or replace it with cacao nibs or cranberries. The more ripe your bananas are, the sweeter the cookies will be. You can also skip the chocolate dipping to make them into breakfast cookies.
Perfect for potlucks, afternoon tea, family gathering or just because.

Dairy free (depending which chocolate you use)

Salmon has many health benefits, especially on the brain, thanks to its high concentration of Omega 3 Fatty acid. It can help reduce cerebral inflammation, increase cognitive capabilities, and much more. I am not an expert in this but I can say that I have seen its effect on a person close to me. For that reason, this recipe is very close to my heart. It is simple and easy to put together. It is filled with protein, healthy fat, and it is low in sugar.
As per the sauce, I had some fresh cilantro in my fridge so I thought something refreshing on the salmon might be good. It turned out to be delicious.
